SHIRRED EGGS

INGREDIENTS

1 TBS butter

2 TBS heavy cream

1 Slice deli meat (Applegate)

2-3 eggs, cracked in advance and set aside in small bowl (Nellie’s)

2 tsp fresh herbs, finely minced

2 TBS of your favorite cheese, shredded (parmigiana, Gouda or feta are especially nice)

Salt & Pepper to taste

Toast (Dave’s Killer Bread)

PREPARATION

  1. Preheat oven broiler. Place butter and heavy cream in the center of an oven safe gratin or shirrer dish. If making more than one serving, line individual gratin dishes on a baking sheet for easy moving in and out of the oven.

  2. Place gratin dish under the broiler for 1 minute or until the butter has melted and is just beginning to bubble.

  3. Pull the gratin dish from the oven and quickly lay down the deli meat, followed by the eggs, cheese, herbs and salt & pepper to taste.

  4. Place back under the broiler for about 5 minutes or until the whites are just cooked through and the cheese has begun to lightly brown.

  5. Pull out and serve hot with a side of toast.
