Summer Chicken Salad with Blueberry Vinaigrette
Bring in the flavors of summer with a fast and fresh vinaigrette. Blended blueberries with balsamic, honey, lemon juice and olive oil make a delicious dressing for seasonal meals. Mixed greens, sliced chicken, crumbled bacon, avocado and red onion with a blueberry pop create a satisfying salad with crunch and just a touch of sweetness.

1 package of Signature Farms Spring Mix
6 slices of Signature Select Thick Sliced Hickory Bacon, cooked and coarsely chopped
1 Signature Farms Whole Roasted Chicken, broken down and sliced
1-2 Avocados, peeled and sliced
¼ large red onion, thinly sliced
½ cup feta, crumbled
½ cup fresh blueberries
½ cup blueberry vinaigrette (Recipe to follow)
1. In a large salad bowl, toss spring mix with a light coating of Blueberry Vinaigrette.
2. On top of the greens and to make a beautiful presentation, arrange the fixings of bacon, sliced chicken, avocado, red onion, and feta. Sprinkle fresh blueberries over the top and dress with a final drizzle of Blueberry Vinaigrette.
1 1/4 cup Signature Select Whole Unsweetened Blueberries, thawed
¼ cup balsamic vinegar
2 TBS honey
Juice and Zest from 1 lemon
½ cup Extra Virgin Olive Oil
Salt & Cracked Pepper to taste
1. Combine blueberries, vinegar, honey, lemon juice and zest, and extra virgin olive oil in a high powered mixer and blend on medium high for 45 seconds or until smooth and emulsified.
2. Taste and season with salt and pepper.
Chef Tip: Store in an air tight mason jar up to one week in the fridge. Simply shake vigorously for 20 seconds to revitalize the rich and creamy consistency before serving.
