Sunbutter "Peanut Sauce" 2.0

Mother Juice co-founder Laura Baldini shared her go-to healthy Spring Roll recipe with us in The Chef's Pantry. We packed our fresh spring rolls with rice stick, avocado, sliced peppers, cucumber, tofu, lettuce, radish, carrots, shaved celery and fresh herbs like mint and cilantro. Packed with veggies, these are colorful, satisfying and fun to roll up. But what really makes them impossibly delicious is Mother Juice's secret silky, rich and flavorful Sunbutter "Peanut Sauce" 2.0. We served it on the side and have been enjoying leftovers with sliced veggies as a snack. It would also be delicious over chicken! Vegan. Gluten Free. Low Carb. Low Sugar. Dairy Free.


Sunbutter "Peanut Sauce" 2.0

INGREDIENTS

  • 1 can full fat coconut milk (14oz)

  • 1 C sunbutter

  • 4 garlic cloves

  • ½ C lime juice

  • ½ C tamari

  • ⅓ C sriracha

  • ¼ C maple

  • ⅛ t salt

PREPARATION Add all ingredients to a blender and mix until smooth. It's that easy! Store in an air tight container in the refrigerator up to one week.
